I love the broccoli salad at the deli – pretty much any broccoli salad! Whether is a bacon broccoli salad or an autumn fruits broccoli salad, I have yet to meet one that I don’t like.
The problem with the deli version is that the added ingredients usually spike the WW points and calorie content, plus it’s loaded with unhealthy fats from the type of mayo that the delis usually use.
I’m on a kick of trying to make more wholesome WW recipes because a lot of them seem to rely on really crappy food (like foods that contain aspartame and the like). I want to incorporate more whole, healthy foods that don’t rely on unhealthy ingredients.
Craving broccoli salad, I started experimenting and came up with this recipe.
Broccoli Salad (WW 2Points)
Serves 2
9 ounces prewashed broccoli, cut into bite sizes (I found a great way to reseal the bag of broccoli so it can still be steamed in the smaller portion! More at the bottom of the recipe.)
2/3 cup nonfat cottage cheese
1/2 Tablespoon raw sugar
1/2 cup diced roma tomatoes with seeds removed (or quartered cherry tomatoes)
1/2 cup chopped onion
1/2 Tablespoon white wine vinegar
1/4 cup low calorie mayo (this is where the majority of the points come from – I try to find one that is olive oil or avocado based if I can)
Mix all wet ingredients, then separately blend the tomato, broccoli, and onion. Then stir together.
It’s delicious and nutritious!
Now, that sealer….my goodness. I didn’t think I was going to use this little thing but I use it about every other day. It takes a little practice to get it just right, but it’s not hard.
I’ve used it to reseal stuff over and over (the same container). Like chips, I open it again, take a few out and reseal it and little lower on the bag. It works great!
Chips, cereal, fresh veggies – it’s worked well on a lot of different bags! The thing I was most excited about was the fact that I didn’t ruin my steamable broccoli bag when I needed to take a few pieces out, so I decided to share it here.
I did try a different model first and it required plugging it in and I knew I wouldn’t use it. This one runs on a single AA battery and it’s magnetic and sits right on the fridge!
