I used the Ninja Foodi pan and an egg cup mold that I bought from Walmart with this kit from Amazon. Only 2 points for 2 egg bites, but if you use lighter bacon (see below), it’s only 1 point per 2 egg bites!
Ingredients:
6 eggs
11 Tablespoons nonfat cottage cheese
2 Tablespoons nonfat Greek yogurt
4 crisply cooked bacon (Applegate uncured, sugar-free) (or 4 slices of the Applegate uncured turkey bacon will drop to 1 point per serving)
2-ounces Light cheddar cheese (or 2 wedges Laughing Cow light)
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
salt and pepper to taste
Directions:
Fill the pot half full with water and heat the water to 185 degrees.
Blend the cottage cheese, cheddar, yogurt, spices, and eggs until smooth. I used an immersion blender because I made this in the motor home.
Crumble the bacon evenly into each cup. Put the egg mold on top of the metal lift, then fill it with the egg mixture. Cover tightly with the silicon lid, then use the metal lift and lower the cups into the water.
Reduce the heat to medium.
Cook the cups for about 30-35 min, checking every 5 minutes at about 25 minutes. They are done when they are no longer runny. Press the tops just a little to make sure.
