Homemade Easy “Belvita” Cookies with Just 3 Ingredients

Three ingredient cookies have exploded all over the Internet. Most of them are the exact same recipe over and over again which sounds great on the surface and tastes great straight out of the oven, but by day two the cookies tend to take on a gummy, soggy and unpleasant texture.

I really needed something low-cal and healthy for breakfast that would keep well. I loved Belvita cookies, but when I realized how loaded with sugar. So, I started experimenting.

This is the tool that I use to mash bananas. It was purchased initially to make baby food, but it’s such a handy masher that I kept it. 

The result is a cookie that tastes great and actually has a “cookie” texture. It’s very similar in texture to Belvita with half the calories, less sugar, and overall more healthy!

Ingredients:

1 very ripe banana, mashed thoroughly

1 cup peanut butter (preferably organic no sugar or salt added – I use Maranatha smooth organic peanut butter) OR any nut butter*

2 cups oats (quick cook)

1/4 cup water

Additives (optional):

Mini Chocolate Chips (I use Enjoy Life)

Chocolate Chunks (Enjoy Life, but you could chop up a couple of Choc Zero bars to save on sugar)

White Chocolate Chips

Dried fruit (cranberries, raisins, apricots, etc)

Nuts

Instructions:

Bake at 350 for 17 min. I line the pan with aluminum foil for easier clean up (they don’t stick). Use a cookie scoop for a faster process. Makes 12 – 15 depending on how big you make them.

Allow the cookies to cool on the pan.

I usually stack them and wrap the foil around them and just store them on a plate on the counter.

These keep well, though mine are usually gone in a couple of days.

*I’ve also used a combination of nut butters (cashew and almond) and they were great! I tried honey peanut butter as well, which adds about 10 calories per cookie but may help satisfy your sweet tooth.
