WW One Point Muffin Variations

All of the muffins are made using the WW 1 point Kodiak Miracle Muffin Recipe found here.

This is a collection of all of my experiments with the Miracle Muffin recipe. I’ll add as I make new ones because not only does it help you, it helps me to remember my favorites!

NOTE: I sometimes will add a scoop of my favorite collagen powder which makes the muffins a little fluffier and lighter than their usual dense muffin texture. I use Vital Proteins and usually only the marine collagen. A little extra health boost doesn’t hurt!

Pineapple Upside Down Muffins

(Top Left) Mix in 1/4 cup fresh or unsweetened canned pineapple and top with 1 maraschino cherry

Sunshine Muffins

(Top Right) Top with chopped orange (push them down into the batter) and 3 white Lily’s choc chips

 

Candy Muffins

Top each muffin with two Lily’s Choc Chips and two Unreal or Lily’s coated chocolate candies. (The one in the picture is a little overcooked, I was testing a convection oven. It was still yummy though!)

 

 

Chocolate Chip Muffins

(Top Right) Top with 4- 5 Lily’s or ChocZero chocolate chips

Amazingly Decadent Sweetheart Muffins

(Top Left) Use chocolate mix and top with 1-2 fresh raspberries and 3 – 5 chocolate chips

 

 

Hint of Flavored Peanut Butter Muffins

Sprinkle 3 – 4 Lily’s dark chocolate chips and then lightly dust with flavored peanut butter powder (I like the toffee or churro). Pardon the one on the bottom that got a couple extra chips.

 

 

Strawberry Shortcake Muffins

These are a little trickier than most of my muffins. First top each muffin with 2 – Lily’s white chocolate chips. Then bake for 10 minutes, remove while the tops are still moist and sprinkle with 1/4 teaspoon crushed freeze-dried strawberries. Return to the oven and bake the remaining 10-12 minutes. Otherwise, the berry topping will singe.

 

Pumpkin Muffins (Savory)

For these muffins, use 1 cup – 1 1/4 cup pumpkin instead of 2 bananas and for the mix use the plain buttermilk Kodiak protein mix or the pumpkin mix. Add onion (sauteed is best), 1 Tablespoon of golden milk powder, 1 teaspoon of chili powder. Top with 3 pepitas.

 

 

Peanut Butter Cup Muffins

Use chocolate mix. Prepare PB2 by adding water (about 2 Tablespoons PB2 to 1 Tablespoon water to start. Add water until almost fluffy, but not thin consistency). Shape a swirl of 1 teaspoon of the PB2 mixture on top of each muffin with a knife and add 3 Lily’s chocolate chips.

Better Method: This takes a little more effort, but if you wait to add the peanut butter and pipe it into the middle of the muffin instead, it improves taste/texture.
