Perfect Salmon Patties – Just 3 Ingredients

I grew up with this recipe, though originally the Panko was crushed saltines. It’s a super simple, fast, healthy lunch or dinner. We usually eat them in sandwiches or on pita bread, but they work well alone also if you’re trying to cut carbs.

Makes two sandwich-sized patties, about 160 calories each.

1/4 cup whole wheat panko crumbs (or crushed saltines if you’re in a pinch)

1 5 oz packet of salmon

1 egg

Prepare a frying pan or griddle with nonstick spray of your choice.

Add all ingredients to a small bowl and mix thoroughly with a fork or with your hands.

Divide mixture in half and form into two patties.

Place patties into prepared pan and cook over medium high until lightly browned on each side. Total cook time is about 4-6 minutes depending on how thick the patties are. I like to turn them several times, pressing them down a little flatter with each turn to make sure they’re cooked through.
