This recipe isn’t exact, but it’s pretty close. They stopped carrying at our local TJ’s, so I needed to improvise!
Ingredients:
1 large mango, peeled and chopped
Juice from 3 small limes
1/4 cup apple cider vinegar (I use Braggs
6 scallion, finely chopped
2 Tablespoons honey
1 Tablespoon raw sugar
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/3 cup extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon ground mustard
2 Tablespoons fresh cilantro
Fresh ground pepper to taste
Instructions:
Set aside mango, onions, and oil and combine other ingredients in your blender. Add mango chunks and puree until smooth.
Stir in chopped scallions. Slowly whisk in oil. Taste and add more salt, if needed. Transfer to a jar to store in the fridge until needed. Shake before using.
