Whole 30/ Paleo Compliant Orange Chicken Recipe

I made this as a main dish with an “oven fried potato” side, but it would work great with some cauliflower fried rice and vegetables!

 

6 large chicken breast strips

1 cup compliant orange juice

1 Tablespoon orange zest

1/4 cup coconut aminos

5 medium pitted dried dates

1/4 to 1/2 teaspoon garlic powder

1 Tablespoon arrowroot powder

1 1/2 teaspoon salt

1/2 teaspoon fresh pepper

 

Heat oven to 400 degrees

Add all ingredients but the chicken into a blender (or bullet) and thoroughly blend. Pour the mixture into a large ziplock, add chicken and toss to coat.

Remove chicken and place in single layer on a lined baking sheet.

Cook for 15 minutes, then remove from oven and turn over, baste and return to oven for an additional 10 minutes.

During the last phase of cooking, add remaining baste mixture to a saucepan and heat to thicken to top chicken before serving.

 

*This can also be used with frozen chicken tender strips. Simply raise cooking time to 24 minutes the first round and 15 for the last phase.
